Terry’s Notes
• To achieve the white-style, fruit coming in from harvest is gently pressed. The first free-run juices are clearest and set aside for White Pinot Noir.
• This is the same method used to make Champagne or méthode traditionnelle sparkling wines – gold wines made from red Pinot Noir fruit.
• White Pinot Noir has the weight and mouthfeel of red wine, but the soul of white wine.
