Domaine Willamette is dedicated to producing the highest quality sparkling wines. Our Brut Rosé is crafted from estate-grown Pinot Noir using méthode traditionnelle where the wine goes through secondary fermentation in this bottle. It’s then aged on its lees for 30 months to develop complexity while preserving vibrancy before disgorgement.
On the Nose: Pale salmon in color with a fine mousse and an elegant bouquet offering notes of strawberries and cream, apricot, buttered pastry, warm baking spices and salinity.
On the Palate: Flavors of nectarine, citrus zest and almond are carried by an energetic palate with a creamy texture, elegant structure, persistent length and vibrant acidity.
Food Pairings: Offering great food pairing versatility and the ability to elevate any occasion, enjoy at the start of any gathering or with brunch, lunch, dinner or dessert dishes including eggs benedict, beet salad with citrus and goat cheese, ham canapes, crab and corn fritters, orange-cured salmon, ahi tuna, duck, antipasto platters with charcuterie and soft cheeses and savory and sweet panna cotta. Bernau Estate Vineyard
Dundee Hills AVA
Named in honor of Founder Jim Bernau, Bernau Estate Vineyard is located in the Dundee Hills and the future home to our Méthode Champenoise sparkling wine facility, set to open in 2022. The vines at Bernau Estate Vineyard are farmed using biodynamic techniques, with plans to apply for a Demeter certification in 2022. Biodynamic farming uses sustainable, organic practices, including composting and the use of special preparations, to holistically promote the soil's long-term health.
The vineyard has a very gentle south west facing slope and mostly Woodburn soils, which are deep, nutrient rich and well drained soils. The original 15 acres of Pinot Noir was planted in 1994 and in 2019 we added 9 acres of Pinot Meunier, Chardonnay and Pinot Noir.
